Sandhill’s winemaking techniques are designed to enhance, not interfere with, the naturally occurring fruit flavors in their wines. Two words you will hear frequently from Howard to describe his winemaking technique are “gentle” and “non-interventionist”. Great fruit, helped along only when necessary using a soft touch, will result in great single vineyard wine from BC.
RECEPTION – Grilled Chicken Spoon, Peach Salsa Butternut Squash & Almond Quiche.
WINE PAIRING – Pinot Gris 2015 – Hand-harvested from Hidden Terrace Vineyard. Wonderful flavours of melon, pear, white peach and apricot fill the mouth.
APPETIZER – Twice Baked Crab Soufflé Autumn Greens, Pineapple Vinaigrette.
WINE PAIRING – Pinot Blanc 2013 – This medium-bodied wine has a soft, smooth mouth-feel, with just enough acidity to refresh, and has flavours of apple, pear and key lime.
MAIN COURSE – Fraser Valley Duck Breast With Red Wine Reduction Truffled Yukon Mashed Potato.
WINE PAIRING – Merlot 2013 – Garnet colour with a bouquet of blue plum, ripe black cherry, sweet baking spice and chocolate.
DESSERT – Okanagan Gala Apple Tart With Goat Cheese Gratin
WINE PAIRING – Rose 2015 – At first taste, expect a refreshing and juicy wine that is just off-dry with fruity notes of strawberry, white peach, cherry and white currant, then finishing surprisingly dry and spicy with hints of tea leaves, red berry and a touch of earth.
